Chicken and Rice (in a crockpot)
So i came across this recipe and it was so simple and so yummy I had to share it! It was on Chrissy Jordan’s southernplate.com and it is for a chicken and rice recipe in the crockpot. I loved its simplicty and the amount it made could easily feed a family.
You’ll need:
- 4 boneless skinless chicken breasts
- 1 onion (it called for a vidalia but I could only get a small regular onion. If you love onion use a vidalia. I was sad after using the small one that I didn’t get much onion flavor. but then again I love onion)
-1 8 oz box of yellow rice (I used Zahtaran’s) cooked according to directions
-1 cup shredded cheddar cheese
-1 can of cream of chicken soup
-1 can of corn, drained
Directions:
-Put chicken and the bottom of the crockpot. Place the chopped onion over the top of the chicken. Then spoon over all of that the cream of chicken soup. Cover and cook on low for 7-8 hours or on high for 3-4 hours (I cooked it on high and it was perfect at 3 hours)
-You need to cook the rice ahead of time before adding it to the chicken. I cooked it a half hour before I turned the crock pot off but you could even cook it the night before.
- When time is up, add the drained corn, yellow rice, and cheese. Mix everything together. As you mix everything the chicken will start to shred. Serve!
